Potato Casserole

"This recipe was given to me, and I continue to pass it down to everyone who tries it!"

INGREDIENTS:

     

  • 3    Medium Potatoes
  • 1    Small Onion (Chopped)
  • ½   Medium Sized Green Bell Pepper (Chopped)
  • 1    Cup Cheddar Cheese (Grated)
  • 1    Can Cream of Mushroom Soup (In Its Original
  •       Form)
  • 1    Small Container of Sour Cream
  •       Salt And Pepper (To Taste)
  • ½   Stalk Green Onion (Optional)

     

    *Pre-heat oven to 350 degrees


DIRECTIONS:

Peel then cut potatoes in to chunks (not too thin).  Boil potatoes until tender (don’t boil too long!).  Drain and rinse potatoes.  In a large bowl, combine all ingredients and stir just until it is blended (do not stir too much!).  Place contents in a casserole dish and bake 30-40 minutes (just until onion and bell pepper is tender).
