INGREDIENTS:
1 Package Of Skinless/Boneless Chicken Breasts
(Breasts works better for this recipe) Cut Into Chunks
3 Medium Sized Carrots – Peeled And Sliced (Not
Too Thin, Not Too Thick!)
3 Broccoli Crowns (Cut, Toss the Stems)
1 Package Of Sliced Mushrooms
1 Medium Sized Onion - Chopped
1 Can Cream of Broccoli Or Cream Of Mushroom
Soup (In Its Original Form-I Prefer The Broccoli
Soup)
1 Cup Of Milk (I Only Buy 2 percent)
Salt And Pepper (To Taste)
Cooked Rice
DIRECTIONS:
In a wok or skillet:
Cook chicken, onions and mushrooms in vegetable or olive oil until tender. Remove from heat but keep warm. Steam (my method) or sauté carrots and broccoli (until tender). Add carrots and broccoli to meat. Add the can of soup and milk and stir. Cook on low heat for approximately 20 minutes. Serve over cooked rice. I usually add a nice salad and cheese garlic biscuits (or garlic bread or rolls) to complete my menu.
*Usually enough for leftovers or enough to feed company
